Greek Salad

My favorite salad!  I usually eat this by itself or with meat, fish or chicken whenever I am on a high protein diet.  It is very easy to prepare and of course, very healthy.  I usually prepare the dressing in a small jar, that way I can shake it so that all the ingredients mix well.  Store the dressing in the refrigerator for up to a week.


Ingredients:

  • Salad greens, washed and drained
  • 1 large tomato, diced
  • 1 medium onion, sliced
  • 1 medium cucumber, diced
  • 2 marinaded artichokes (optional)
  • ½ c olives (preferably, kalamata)
  • 1 tsp garlic powder
  • 1 tsp basil (dry or fresh, chopped)
  • 1 tsp oregano
  • 3T extra virgin olive oil
  • 1T balsamic wine vinegar
  • salt, pepper
  • ½ c diced feta cheese
  • chopped Italian parsley


Procedure:

  • Mix first 9 ingredients.
  • In a bowl, blend well, extra virgin olive oil & balsamic wine vinegar.
  • Mix in salt & pepper.
  • Pour balsamic wine vinegarette over the salad green mixture & toss.
  • Top salad with diced feta cheese, and finally, with chopped Italian parsley
