My favorite salad! I usually eat this by itself or with meat, fish or chicken whenever I am on a high protein diet. It is very easy to prepare and of course, very healthy. I usually prepare the dressing in a small jar, that way I can shake it so that all the ingredients mix well. Store the dressing in the refrigerator for up to a week.
Ingredients:
- Salad greens, washed and drained
- 1 large tomato, diced
- 1 medium onion, sliced
- 1 medium cucumber, diced
- 2 marinaded artichokes (optional)
- ½ c olives (preferably, kalamata)
- 1 tsp garlic powder
- 1 tsp basil (dry or fresh, chopped)
- 1 tsp oregano
- 3T extra virgin olive oil
- 1T balsamic wine vinegar
- salt, pepper
- ½ c diced feta cheese
- chopped Italian parsley
Procedure:
- Mix first 9 ingredients.
- In a bowl, blend well, extra virgin olive oil & balsamic wine vinegar.
- Mix in salt & pepper.
- Pour balsamic wine vinegarette over the salad green mixture & toss.
- Top salad with diced feta cheese, and finally, with chopped Italian parsley
